BudgetBytes

Been awhile since I've posted anything. Too many tests since we're coming up on the end of the semester.

     Anyway, this post is definitely close to my heart. My mom found this site through Pinterest which we are both insanely addicted to. budgetbytes.blogspot.com is the best site for the budget concious foodie. She puts up amazing recipes every couple of days and they're always wonderful. Not only does she give the recipe in step by step instructions, she provides pictures for each step, the cost of the full recipe, cost of ingredients, and cost per serving. Beth, the lady who runs the site, is absolutely brilliant. She loves spicy food as shown by her profile picture being her holding a bottle of Sriracha which she uses quite often. I've personally had the tuna and white bean salad, Hawaiian ham quesadillas, red enchilada sauce, chicken yakisoba, honey balsamic carrots (which are addicting), hearty black bean quesadillas, coconut rice, and more. And it's all fabulous and that's only including the 2012 recipes.
     My personal favorite is her coconut chicken with sweet chili sauce. Here is the link to the recipe: Coconut Chicken . Even if you don't like coconut, give it a try it is wonderful. Also it lists shredded coconut which is hard to find. In the baking aisle they have sweetened coconut (usually Bakers or Mounds) which is perfect.
     Just give her a try and I know you'll love it as much as I do.
